 Often
credited with starting the Tex-Mex mania, Jane Butel
published her first cookbooks on New Mexican and American
Mexican food in the 1960s. Sixteen cookbooks later,
her books and her Cooking School in Albuquerque, which
Bon Appetit called among "the best in the US",
bring you all there is to know and love about this cuisine.
Jane
is an internationally recognized authority on the regional
cooking of the American Southwest. The daughter and
granddaughter of accomplished home economists, she is
a cookbook author, teacher and television personality.
Her
interest in Southwestern cooking predates its current
widespread popularity by decades. She was the first
to write about the cooking style that evolved in the
Southwestern border area and is credited with starting
the USA's love affair with this cuisine.
Jane
operates her own site-based Cooking Schools, which have
been recognized far and wide for their quality of instruction.
Jane's Cooking School specializes in week long and weekend
full participation classes on New Mexican and Southwestern
cooking.
Jane
has also established a Satellite Cooking School located

Week
long cooking school in Santa Fe
The
week long classes, which are held in Santa Fe, begin
with a get-acquainted reception at 6:00 pm on Sunday
evening, followed by dinner at a local restaurant
featuring New Mexican specialties.
Monday
through Friday, the cooking sessions begin at 8:30
am with a continental breakfast, followed by Janes
review of the history of the cuisine and major ingredients.
A demonstration of the menu items for the day follows,
along with hints and techniques for success. After
the demonstration, it is your turn to shine! Students
begin cooking in small groups, guided through the
recipes by Jane and her helpers.
Finally,
you will enjoy the fruits of your labor with a bountiful
lunch. Each session concludes at around 2:00 pm with
afternoons and evenings free for you to explore the
beauty and treasures of New Mexico . . . horseback
riding, hot air ballooning, hiking, golf, shopping,
and sightseeing in Santa Fe.
Thursday
evening includes dinner and the presentation of diplomas
at one of Santa Fes fine dining restaurants.

Culinary
Weekend getaway in Albuquerque
If
you cant take a Week Long Class, consider a
weekend getaway to the lovely village of Corrales,
located along the Rio Grande on the outskirts of Albuquerque.
The Weekend Classes begin with a get-acquainted reception
at 5:00 pm on Friday evening. You will jump right
into the class beginning at 6:00 pm with hints and
tips for the evenings recipes. Saturday and
Sunday sessions begin at 8:30 am with a continental
breakfast, followed by Janes review of the history
of the cuisine and major ingredients. A demonstration
of the menu items for the day follows, along with
hints and techniques for success. Typically, you will
cook in groups of two or three. Jane and her staff
will guide you through the recipes.
Each
session concludes with a bountiful meal of the foods
you have prepared. Saturday and Sunday sessions conclude
by 2:00 pm. With afternoons and evenings free you
can explore the beauty and treasures of New Mexico.
Try horseback riding, hot air ballooning, hiking,
golf, shopping, or sightseeing in Old Town Albuquerque
or take a short drive to Santa Fe.

Culinary
Weekend getaway in Scottsdale
During
the cold winter months you can have the time of your
life with warm temperatures and bright green golf
courses, while learning how to capture the exciting
fiesta flavors of the culinary regions of Old Mexico.
This
culinary excursion is held at the Fairmont Princess,

12 |
Arrival
in Guadalajara by 4:00 pm. We will meet
you at the airport and escort you to your
charming bed and breakfast in Ajijic, a
popular artist colony located on the shores
of beautiful Lake Chapala. Welcome dinner
featuring local specialties.

13 |
After
breakfast at the hotel, we will tour the
city of Guadalajara, which Prince Philip
said he thought was the most beautiful city
in North America. With eucalyptus trees
lining its boulevards, and music everywhere,
Guadalajara is indeed a pleasure to visit.
We will see the Seventeenth century government
palace and the Hospicio cabanas known for
their incredible Orozco murals. Visit the
neoclassic Teatro Degorrado and the market.
Lunch will be on your own before a tour
of Tlaquepaque, considered one of the finest
and most important pottery centers in Old
Mexico. Time for shopping before returning
to Ajijic for an evening at leisure.

14 |
After
breakfast, journey to the small upland town
of Tequila in the middle of huge maguey
plantations. This is the town where tequila
MUST be made in order to be called tequila.
We will visit the beautiful Herradura factory
and have a tasting. Lunch on your own in
town with some free time to explore. Return
to Ajijic and enjoy a cooking lesson with
a local regional chef where we will learn
typical Mexican dishes and then enjoy dinner
based on the lesson.

15 |
After
breakfast, we will depart for the town of
Patzcuaro, the Sixteenth century capital
of Michoacan. Here you will think you stepped
back in time as you see the Puerpecha Indians
fish, farm and ply their crafts. You will
have the afternoon and evening free to explore
this typical colonial town, with its whitewashed
houses and views of Lake Patzcuaro. Lunch
and dinner are on your own.

Morning
guided walk of Patzcuaro known for its rich
cultural heritage and attractive hand-made
pottery, brilliant fabrics and wood carvings.
Lunch on your own. Late afternoon cooking
lesson of the historic region's specialties,

Transfer
to San Miguel Allende. With cobblestone streets,
colorful markets and fiestas, numerous shops,
galleries and fine restaurants, San Miguel
is a favorite destination for artists, writers
and world travelers. Check in at Casa Luna

to the romance of Old Mexico with splashing
fountains and hacienda-high walls covered
